This course will cover the go-to opportunities to interact with historic sake brewing culture while also looking at the drink from a different angle as we enjoy the famed sake production region of Nada. We'll also be enjoying konanzuke pickles made using sake lees and retro foreign foods that sake brewers from ages past must have enjoyed themselves. The "Old Sake Brewery" Sawanotsuru Museum

Experience old-fashioned sake brewing in an Edo-era brewery

Sawanotsuru boasts three hundred years of history since its founding. You can enjoy the history and culture of sake brewing at its museum that makes use of an Edo-era (1603-1868) sake brewery as-is. Its sake brewing tools that are designated as a cultural property are displayed in accordance with the brewing process, making them easy to understand. You'll begin to picture what it must have looked like at the time it was still active. The former location of its underground tank room where sake was pressed from the moromi is a rare site even within Japan. Try picking up some of the unpasteurized and undiluted sake found only at the brewery from the attached shop.

Mikage Kokaido / Mikage Kokaido Shokudo

A carefully guarded demi-glace savored in a famous structure

The Mikage Kokaido was constructed in Showa 8 (1933) thanks to a donation from Hakutsuru Sake Brewing's seventh president, Jihei Kano. The dining hall located in its basement is a restaurant started by the current owner's grandfather, a former hotel banquet hall manager. Locals of all ages seem to have loved the hayashi rice and steaks served at a time when Western cuisine was considered chic. Their carefully made demi-glace sauce that has been passed down since its initial owner is a masterpiece still enjoyed by many fans. Try savoring it together with their most popular dish, the omelet hayashi.

Kobe Konan Muko-no-sato (Konanzuke Museum)

A traditional taste created with Nada's sake lees and hon mirin brewed in-house

It all started when the founder ran a sake lees brokerage in Nada. The narazuke pickles he began making in Meiji 38 (1905) used lots of fragrant sake lees from the sake brewing powerhouse of Nada, then used Hakubishi hon mirin brewed in-house and Hakubishi hon mirin lees to adjust the flavor before being aged for a year or more, creating "konanzuke." This museum where you can learn about the production process and history of konanzuke is a Western-style building built as the president's home at the time in Showa 5 (1930). Covered in fine design details, there are plenty of places to check out inside of the building (free tours).

Nadagogo Sakedokoro

Flights and pairings from 26 Nada Gogo breweries

A restaurant created in 2022 where you can stand and drink sake from 26 breweries located in Nada Gogo. Buy tickets at the register in advance, then exchange them to order sake or food. The Nadagogo Sakedokoro Set is especially popular. It pairs five kinds of sake that are characteristic of Nada Gogo with three small matching dishes. Even those who aren't experienced sake drinkers will be able to enjoy the differences in taste and character.
